Puff Pastry Pop-Tarts® with Quebec Strawberries

Why not revisit this sweet dessert, a childhood classic, with a delicious, local, and healthy twist? And what better way to do so than with our beautiful Quebec strawberries! In fact, if our calculations are correct, the first strawberries of the season should be appearing in the produce aisle of your local grocer within a few weeks.

Ingredients

Pop-Tarts® Filling

1 ¾ cups whole, fresh Quebec strawberries
1 cup sugar
1 tablespoon lemon juice
1 small handful of Labrador tea (optional)
½ cup diced fresh Quebec strawberries

Frosting

1 cup powdered sugar
2 tablespoons milk
½ tablespoon sweet clover extract (optional)

Pop-Tarts®

2 packages all-butter puff pastry
2 tablespoons unsalted butter

Toppings and Decorations (optional)

Quebec cranberry seeds
Quebec dried fruit
Lavender flowers
Roasted buckwheat seeds
Edible flowers
Pollen of bees
Fresh, sliced strawberries

Instructions

Pop-Tarts® Filling and Icing

In a mug, measure 1 ⅓ cups of washed and hulled strawberries. In a large bowl, add the sugar and lemon juice. Mix, then cover and refrigerate overnight.
In a small saucepan over low heat, cook the strawberry mixture for about 30 minutes. Let cool.
In a blender, lightly pulse the whole strawberries until they are coarsely chopped.
Once the mixture is completely cool, add the chopped fresh strawberries.
For the icing, whisk together all the ingredients in a large bowl.

Assembling and Baking Pop-Tarts®

About 30 minutes before using, remove the puff pastry from the freezer. Preheat the oven to 400 degrees.
On a lightly floured work surface, unroll the puff pastry. Cut into 24 rectangles, each 3 inches wide and 5 inches long. Note that puff pastry is easier to work with when slightly frozen.
Place a heaping tablespoon of filling in the center of each of the 12 small pastry rectangles. Be careful not to overfill!
Brush the edges of each of the 12 rectangles with a little beaten egg yolk. Place the second rectangle on top of the other half and press the edges of the Pop-Tarts® together with a fork to seal the pocket. Return the Pop-Tarts® to the freezer.
Once the Pop-Tarts® are frozen, remove them from the freezer and lightly brush them with melted butter.
Bake for 20 to 25 minutes, or until golden brown.
Remove from the oven and let cool on the baking sheet. When they're still warm, add the icing to the Pop-Tarts®, creating your own designs. Get creative!
