At Restaurant 1668 in Chaudière-Appalaches, boldness is always in service of flavor. Here, local ingredients are celebrated both on the plate and in the glass. The Food and Beverage Director, Kevin Grondin, shares one of his most intriguing creations: the eggnog cocktail with croissant. An unusual drink that perfectly reflects the restaurant’s philosophy: creativity and Quebec products.

When Local Ingredients Inspire the Bar
“Showcasing local products had to be consistent for us. Not just in the kitchen, but also behind the bar,” says Kevin.
Located in Saint-Georges in Beauce, 1668 is more than just a gourmet stop—it’s a true destination for lovers of local cuisine. Its name references the total area of the province of Quebec, a nod to its deep connection to the terroir.
The restaurant, a finalist for the 2025 Prix Restaurateur, is committed to using only local, Quebec, and seasonal products, whether on the menu or in its wine, beer, and spirits selection. The result? A wine list that is 100% Quebec, with no wines from elsewhere—an extremely rare choice for a restaurant. With 80 labels from 29 different vineyards, each wine is carefully selected to complement the dishes and highlight Quebec’s terroir. A deliberate, thoughtful choice perfectly aligned with the identity of the place.

“We understand the skepticism—it’s still widespread—but Quebec wine today is nothing like it was 10 or 15 years ago. Winemakers have made tremendous progress, both in the choice of grape varieties and in their techniques. Here, we serve wines we are proud of. And very often, a simple tasting is enough to change people’s perceptions,” says Kevin.
