Amuse-bouche trio: Chambly mushroom crème brûlée / French toast brioche topped with cranberry whipped cheese, caramelized nuts and dried duck breast / Goat cheese nougat with dried fruits
Magdalen Islands harp seal: seal tataki, sour cream with Bas-du-Fleuve salted herbs, sea buckthorn coulis from the Eastern Townships, rice vermicelli, mustard caviar (+$6)
Hunter’s bison stew: braised bison in red wine vegetable broth, mushrooms, bouquet garni, Gabrielle potatoes from Ferme Valupierre, roasted Brussels sprouts with bacon (+$6)
Maple dessert: homemade maple leaf cookie in a vanilla entremet with maple ganache, maple biscuit base, whipped cream and meringue shards

Jean-Talon Market apple-maple sausage, beer-braised pulled pork, maple scrambled eggs, chocolate chip waffle, fresh fruit, breakfast potatoes and mesclun (vegetarian option available).
