5 Ways to Cook with Mache

Tips and Tricks Featured Food

Every week, it’s the same story. We find ourselves in the produce section wondering: what should we eat? Then we wander the aisles, searching for new ingredients that might finally shake up our usual meals. This time, why not explore mache? Popular in Europe, it’s still relatively under the radar in Québec. So, what exactly is mache?

First, it’s a tender green sprout, known for its delicate leaves, subtle nutty flavor, and high omega-3 content. But that’s not all — mache also contains beta-carotene, which the body converts into vitamin A, along with several other beneficial nutrients.

1. On Pizza

Looking to switch things up from the classic “all-the-toppings” pizza? Swap out the pepperoni for smoked duck, mushrooms for figs, and peppers for mache. In short, start from scratch! This touch of green pairs perfectly with any sauce — just add your favorite protein, a selection of fresh market veggies, and pop it in the oven. A simple and delicious way to reinvent your pizza Fridays!

3. In Your Smoothie

The smoothie: truly one of the best inventions for all the snooze-button champions out there. Preparing it the night before saves precious minutes of sleep — not insignificant! All jokes aside, let’s talk recipe. Give the classic strawberry-banana combo a twist by adding a few mache leaves. Not only are they a great source of omega-3s, but they also give your smoothie a beautiful green hue.

A great alternative to spinach or arugula, mache adds a little something special to any salad. On its own or paired with other greens, this tender sprout pairs perfectly with a light vinaigrette.

On dira ce qu’on voudra, le sandwich est le lunch par excellence des dîners pressés. Par contre, on fait vite le tour de la combinaison jambon-fromage… Varier un ou deux ingrédients peut carrément donner un nouveau souffle à votre sandwich.
